A favorite classic

A lidded copper dish originally used by French cooks to prepare “Potatoes Anna” has been described as the most beautiful of kitchen wares. The lid, which has side handles, covers the dish during baking and is then reversed for serving. A cast-iron skillet was used to test this recipe. Several steps were eliminated, along with more than half the fat, to create my lighter version of this classic dish without sacrificing flavor.
